Stir fry veggies with rice… lunch time!!

Lunch time! here’s something fast and simple for you to prepare under 30 minutes..

1/2 cup quinoa
1/2 cup brown rice
1 serrano chili
1 1/2 cups small cubed eggplant
1 large zuchini cubed
1 red onion finely chopped
1 1/2 cups brocoli florets
3 tablespoons sesame seed
1/2 cup nutritional yeast
braggs liquid aminos
1 minced garlic clove
handful of finely chopped basil
olive oil
sea salt
pepper

Begin by cooking the rice and quinoa: on a small pot stir fry half of the onion, when soft add the rice and quinoa and keep stir frying just for a few seconds. Add two cups of hot water, cover and let simmer on low heat. For this to cook it will take about 15 to 20 minutes…

In the mean time stir fry the rest of the onion, the chili and garlic in a large pan. Add the vegetables and pepper and keep cooking until the colors look vibrant and fresh. Now add the rice and quinoa and let everything cook for a few seconds together so the flavors combine. Turn the heat off and add one tablespoon of olive oil, braggs liquid aminos, the chopped basil, nutritional yeast and sesame seed and blend in softly. Listo!!
