Monkey night… that HAS to mean banana bran muffins!

So tired we are… biking, yoga, more biking, some stretching, laundry, cleaning, making aromatherapy products and can’t remember what else…  time to relax and enjoy like monkeys!!

Now Chris has decided to be in a crazy muffin mission, you’ll need:

  • 1 1/2 cups flour -tonight we’re using a mixture of teff, soy and dark rye, choose what ever drives you crazy at the moment.
  • 1/2 cup oat bran
  • 1 Tbsp. poppy seeds
  • 1 Tbsp. chia seeds
  • 2 Tbsp. grounded flax seeds
  • 4 Tbsp. coconut oil
  • 1/2 cup sweetener -we’ll use sucanat tonight
  • 2 smashed bananas
  • 1 cup soy milk
  • 1 pinch sea salt
  • 1 teaspoon baking soda

Preheat the oven at medium temp, mix well all the ingredients together. You might need a little bit more soy milk if you feel the dough is too dry. Oil a six muffin dish, fill evenly and into the oven! they will usually take about 30 minutes to bake, who knows, just check the oven, be patient and after taking them out of the oven let them rest for a few minutes! I know you want to eat them now… so do we, but it’s worth the wait you’ll see!!

Completely vegan, packed with complete protein, high in fiber… what else, delicious!

Now the monkey in the picture is Fabio. A little bit shy but so, so very naughty! we found him munching in Chris birthday gift box and decided to adopted him:)
